Healthy lunch recipes with an egg. Mostly low carb

Eggs are always delicious, for breakfast, dinner and lunch. With Easter coming up, I thought it would be fun to post some healthy lunch recipes with egg.

Low-carb eating

I have been eating low-carb for a few years now. And although in a stew I just eat potatoes, on other days I leave out the potatoes, pasta and rice and have extra vegetables. For lunch I look for healthy recipes and other than bread.

This way I also get lots of vegetables for lunch.

Easter is coming up

Egg for lunch is of course a great idea and with Easter coming up, I thought it would be fun to post some healthy lunch recipes with egg. With this of course still the note that too many eggs is not healthy, but is not that with everything where ’too’ stands for.

Healthy Lunch recipes with egg

One of my favorites healthy lunch recipes is that of Zucchini with Egg and Emmental. The original recipe is from one of Pascale Naessens’ cookbooks, but I adapted it to my own taste. Below is this recipe, as well as more healthy lunch recipes with egg:

Zucchini with egg and Emmental

for 2 people

  • 2 zucchini
  • 3 eggs
  • 100 gr gr grated emmental cheese
  • parsley leaf

Preheat the oven to 180 degrees; Mix the eggs with three quarters of the cheese and the parsley leaves.Place a sheet of baking paper in a springform pan. And put half of the egg mixture in this. Cut the zucchini into thin slices and put them all around in the springform pan as a ring. Pour the rest of the egg mixture over this and sprinkle with the rest of the cheese.

Put it in the oven for 20 minutes.

Muffins with vegetables

  • 4 eggs
  • 50 gr grated cheese
  • Vegetables-just what you have on hand
    • bell bell pepper
    • mushrooms
    • zucchini
    • tomato

    Preheat the oven to 200 degrees and chop the vegetables small. Divide among the muffin cups and top with the grated cheese. Beat the eggs with a little milk and add salt, pepper and spices to taste

    Put the muffin tin in the oven and leave it in the oven for 20 minutes or so. Let it cool and you have a nice healthy lunch

    Omelette with wok vegetables and chili sauce

    • 6 eggs
    • bag of wok vegetables
    • 2 tablespoons of milk
    • 1 tablespoon of olive oil
    • chili sauce

    Put a little oil in the wok pan and briefly wok the vegetables. Meanwhile, grab a frying pan to fry the eggs. Put a little butter in here and put on the fire. Beat three eggs with some salt, pepper and milk and put in the pan. Bake the omelet and once it is done put it on a plate with half of the wok vegetables.

    Fold the omelet in half and pour some chili sauce over it.

    Low carb recipes

    Since September 2019, I have been eating fewer carbs and I am very happy with this myself. I stay at an excellent weight and I find the benefit is that in addition to delicious food, I no longer crave sugar.
